Description
Features:
- ALLEPPEY GREEN CARDAMOM, GI No. 72. The name comes from the harbour these pods once shipped through. Ours grow inland, in the Cardamom Hills of Idukki, the range named after the crop itself.
- ONE RANGE, ONE VARIETY. Njallani Green Gold, bred by a smallholder in the Kattappana hills and now grown across most of Idukki. From the Cardamom Hills near Periyar, never blended.
- 8MM+ BOLD, THE TOP SIZE GRADE. Bigger pods hold more seed, and the seed is where the oleoresin sits. Ours runs around 7 percent, which is what you smell the moment a pod is crushed.
- WHOLE PODS, NOT POWDER. Ground cardamom starts losing its aroma the day it is milled. Crush a pod between your fingers into chai, biryani, payasam or garam masala and the oils are still there.
- ONE INGREDIENT, NOTHING ELSE. Naturally green, no added colour, no bleaching, no polish, no preservative. FSSAI licence 11322012000325. Store dark and airtight, light dulls the green.
Package Dimensions: 35x205x100
Details: GREEN GOLD FROM THE WESTERN GHATS Cardamom is called the “Queen of Spices” — and Idukki cardamom is the queen of cardamoms. Grown in Kerala’s Western Ghats, it’s one of the most expensive spices in the world, prized for its intense aroma and complex flavor. WHY IDUKKI CARDAMOM IS DIFFERENT Not all cardamom is created equal. The hills of Idukki district, at altitudes between 800-1300 meters, create a unique microclimate where cardamom develops flavors impossible to replicate elsewhere. Our cardamom comes from small farmers near the periphery of Periyar Tiger Reserve. The cool temperatures, heavy rainfall, and rich biodiversity of the Western Ghats produce pods with: – Higher essential oil content – More intense aroma – Complex flavor notes of lemon and mint – Vibrant natural green color THE ALLEPPEY LEGACY Historically, this cardamom was traded through the port of Alleppey (now Alappuzha), where auctions set the global benchmark for cardamom quality. The processing methods developed here became the international standard. Today, we call it Idukki Green Cardamom to honor its specific origin. BOLD SIZE MATTERS We source only 8mm+ bold grade cardamom — the largest pods with the highest oil content. These aren’t the small, pale pods you find in regular stores. One pod of our cardamom does the work of two or three ordinary pods. HOW TO USE IT – CHAI: Crush 1-2 pods and add while brewing. The aroma will fill your kitchen. – BIRYANI: Add 4-5 whole pods to the rice. Remove before serving. – KHEER & SWEETS: Crush seeds and fold into the dessert. – PULAO: Temper whole pods in ghee before adding rice. – MOUTH FRESHENER: Chew a pod after meals — a tradition since ancient times. STORAGE TIP Keep pods whole until use. Store in an airtight container away from light and heat. Whole cardamom retains aroma for 12+ months; ground cardamom loses potency within weeks.
